This water mill was owned by Godfrey of Bouillon in the 11th century and by the Prince-Bishop of Liège after his death.
A must-see when you visit Maastricht: de Bisschopsmolen. You will find this water mill in the romantic Jeker Quarter. The mill was owned by Godfrey of Bouillon in the 11th century and by the Prince-Bishop of Liège after his death. Through the Bisschopsmolen Corridor, you get to the back (facade dates from 1609), where you can see the wheel of this water mill. A very instagrammable spot! Settle down on the wall and enjoy a piece of flan, which of course you eat out of your hand like the locals. From 2005, the mill was reunited with the artisanal bakery.
To see, smell and taste the centuries-old chain of farmer-miller-baker, you are most welcome in de Bisschopsmolen and the adjoining artisan bakery on the Stenenbrug. During a guided tour, you will experience the complete authentic process here, while enjoying Limburg Spelt flan and coffee. The miller grinds the ancient Kollenberger Spelt grain in the restored water mill and the baker bakes the tastiest and healthiest types of bread and pastries from it.
