At La Source, the essence of gastronomy takes centre stage: quality produce, pure flavours and respect for the ingredients. A cuisine rooted in classic techniques, complemented by contemporary creativity and a distinctive signature style.

At the helm is chef Ralph Hermans. Born in Kerkrade in 1983, he knew from an early age that he wanted to become a chef. After training at the Hotel School in Heerlen and De Rooi Pannen in Tilburg, he gained experience working with renowned chefs such as Gijs van Eerd, Toine Hermsen, Ralph Berendsen, Hans Kinkartz and Koen Somers. Each and every one of them was a mentor who helped shape his culinary style.

In 2014, Ralph opened his own restaurant, Rantree, where his work was awarded 16/20 by Gault&Millau and a Michelin star. Today, at La Source, he is writing a new chapter and returning to what it’s all about for him: cooking with the ingredient at the heart of the dish.

The kitchen follows the seasons and uses local, carefully selected ingredients wherever possible. Flavours may remain recognisable, but are always given a unique twist. No unnecessary fuss, just precision, craftsmanship and attention to every detail. Classic techniques and modern insights come together in dishes where the produce always takes centre stage.

The name La Source — the source — reflects that philosophy. The natural surroundings of La Butte aux Bois and the Hoge Kempen National Park are a constant source of inspiration, as are the culinary craft and years of experience that Ralph can draw upon. It is a place where tradition and innovation meet, and where gastronomy returns to its roots.

Even beyond the plate, the guest takes centre stage. The service is personal, discreet and attentive; the atmosphere warm and contemporary. In this way, La Source brings cuisine, hospitality and experience together as a whole — refined where possible, pure where necessary, and always with respect for the source.
