Personal service is paramount at Derlon, whose name is a tribute to French chef Louis Desiré Derlon (1827-1902). He opened 'Café Impérial' on the Markt in Maastricht around 1857. Derlon was a man of great culinary sense. In 1858, fresh oysters were available from him daily. This indicated great class and style. In 1870, Louis Desiré Derlon took over 'Hotel Mauel' on Onze Lieve Vrouweplein. This is the later Derlon Hotel.
