Ralf Berendsen's desire.

''I was so obsessed with pastry that I suddenly started getting the best grades at school, and it got even better when I switched from a vocational school to a cooking school where the reins were looser. That's when I really started enjoying it. After getting my SVH Koks diploma Level 2 (independent working chef), I did a two-year internship with Paul Pollux, who really became a mentor for me. I also worked at hotel-restaurant De Swaen in Oosterwijk under the guidance of the illustrious chef Cas Spijkers. That was an inspiration! Above all, he taught me that you don't have to be an idiot in the kitchen to reach a high level. It's a never-ending quest for perfection." - Ralf Berendsen.
